paper flowers

when i got home from washington, i came home to this:  jon and the boys made me flowers :)  i love them and love looking at them.  i don't have the heart to throw them away...they might be on my table for awhile.

new table

jon just finished making this bench and table last night. we are THRILLED with it. we were sad to say goodbye to our 1st table we bought but happy to bring in a bigger one that fits more friends and family. this one is double in size and jon is going to make 2 leaves so we can fit even more people...so if you need a place to come for thanksgiving or any other time, we have room :)!!!

Spinach Stuffed Chicken


Spinach-Stuffed Chicken Breasts

1 tablespoon olive oil
1/2 cup chopped onion
10 ounces spinach leaves
1/4 cup chopped dill
1/2 cup feta cheese crumbles
1/2 cup grated monterey jack
salt
pepper
chicken breasts
2 eggs
1 cup panko bread crumbs

1.  preheat oven to 375*
2.  Warm oil in a large skillet over medium heat.  Add onions and saute until translucent, about 4 minutes.  Add spinach, cover, reduce the heat and cook until spinach is wilted.
3.  Transfer the onions and spinach to a large bowl.  Add dill, cheeses, 1/2 teaspoon salt and 1/2 teaspoon pepper; mix well to combine.
4.  Sprinkle chicken with salt and pepper to taste.  Place eggs and panko in separate bowls or plates.  Coat a baking sheet with cooking spray and set aside.
5.  Using a sharp knife, slit each chicken breast along the long side, cutting about 3/4 of the way through.  Stuff the breasts with equal amounts of the spinach mixture.  Dip the breasts first in eggs and then in the panko.
6.  Place the chicken on the prepared sheet and lightly coat with cooking spray.  Bake for 45 minutes, or until chicken is done.  Makes 4 servings.

macey's room
